The Best Weekend Beef Stew

When you live on a tiny tiny Island, in the Atlantic ocean, closer to Africa than anything else, you expect good weather. Right? Like sunny, everyday all day.

Well, belive it or not, bad / cold weather does occur. True story.

And I must admit….. I LOVE IT !!!

We have had some cold, rainy weather lately. For me that just means cozy time! Candles, blankets , hot chocolate and television. Yiipii !!!

Could do without the horrible flu that goes around though 🙁

Anyways, in times like this one does need some proper nice, warm, comfy food. Well I do anyways 😉

It makes me happy and it makes everything a little bit better.

Amongst the food I have made lately , I present for you : The Beef Stew !!! OMG !!! This is definitely one of my favorites !!!

It is really easy. I promise. But the longer you let it cook, the better it gets and the stew only gets better and better for every day!!!

  • Preheat the oven to 160ºC/300ºF
  • Put a little oil into an appropriately sized pot or casserole pan. Add your 1 chopped onion , 2 chopped garlic cloves and 2 sage leaves and fry for 3 or 4 minutes.
  • Toss 1 kilo Beef cut in to pieces  in a little seasoned flour, then add it to the pan with 5-6 peeled and cut potatoes, 2 peeled and cut carrots, 7-8 cut mushrooms, 1 cut squash, 2 spoons tomato purée, 1/2 bottle of red wine and fill beef stock untill everything is covered, and gently stir together.

    Season generously with freshly ground black pepper and just a little salt. Bring to the boil, place a lid on top, then cook in the preheated oven until the meat is tender. Sometimes this takes 3 hours, sometimes 4 – it depends on what cut of meat you’re using and how fresh it is. The only way to test is to mash-up a piece of meat and if it falls apart easily it’s ready. Once it’s cooked, you can turn the oven down to about 110°C/225°F and just hold it there until you’re ready to eat.

    Serve with bread and butter and a dash of Lingonberry or cranberry jam.
